Gene Café CBR-101 is designed for a household roaster, however lots of Café Owners use it for the Café and Restaurant.

Gene Cafe has added a safety switch onto the roaster – it will beep at you a couple times during the roast and one has to hit the roast button to keep the unit roasting, otherwise the machine will kick itself into cool mode. 

Raters consider the Gene Café Roaster the best value for home coffee roasting and so do we. It is capable of roasting very small batches and up to ½ pound batches to perfection.

Its ease of operation make it an excellent choice for the home coffee roaster who wants the ability to roast larger batches. For the best results I roast 8 ounces at a time for washed coffees and around 6-8 ounces for dry processed coffees (Brazil, Yemen, Harrar and others) In addition, its innovative cooling system allows multiple batches throughout the day.

Control Panel

  • TEMP - Sets the target roasting temperature by rotating the knob. Pressing the knob activates roasting. At the end of the roasting cycle the Gene Cafe will automatically go into cooling mode. However, you can terminate roasting and enter the cooling cycle by pressing this button again. Also, during the roasting cycle you can rotate this knob to increase or decrease the target temperature.
  • TIME - Press once to turn the machine on. It will go through about a 10 second startup procedure. Adjust the roasting time as you see fit - 15 minutes is the default time which is quite right for Full City roasts of many coffees when paired with the default target temperature of 482 degrees. During roasting the dial can be rotated to increase or decrease the roasting time.
  • Temperature Digital Display alternates between target and actual temperatures in whole degrees.
  • Time display alternates between total time and countdown remaining time, in tenths of a minute.




Light Roasting (lightest roast) : 12 min   440°F                                                Strong acid, cinnamon color. New England style. Light brown, dry surface.  yellowish brown color (lightest roast) Grainy smell (weak flavor),   Dry surface 

Cinnamon Roasting (light roast) : 13 min   455°F                                           Slightly acid , cinnamon color. New English style, light brown,dry surface

Medium Roasting (light-medium roast) : 14 min   465°F                                    Acid and sweet flavors, nut color, American style, medium brown, dry surface.

Medium-High Roasting (light-medium roast) : 15 min   473°F                          Acid is stronger than bitter. American norm. Medium dark brown, possibly flicks of oil on surface.

City Roasting (Medium-medium roast) : 17 min   482°F                                    Standard taste. Slightly darker than norm. Taste and flavor from New York City, hence the name.     

Full City Roasting (Dark-medium roast) : 19 min   482°F                                   Bitter is stronger than acid. Used for iced coffee. Definietly darker than norm, patches of oil on surface.

French Roasting (Dark roast) : 21 min   482°F                                           Stronger bitter, little acidity lots of body, French style. Dark brown, shiny surface. Espresso. 

Italian Roasting (Darkest roast) : 23 min   482°F                                           Stronger bitter without acid, black Italian or Spanish. Espresso. Very dark brown, almost black, very oily.
